This is so delicious!
If you have historically assumed that the texture of cottage cheese would be objectionable, I was once like you. Then I was served some as a side at a hotel restaurant that’s been around since the ’50s, and was surprised to find it creamy and satisfying. Then! I read about a chef has it for lunch every day, and was like “Oh yeah! Cottage Cheese is tasty.” Yum.
We are cottage cheese fanatics! I love it with fruit, and growing up, it was very common to have cottage cheese and noodles for dinner. Just saute some onions in butter until clear and slightly sweet, add some wagon wheel noodles (fresh from the pot of boiling water), a big dollop of cottage cheese, some salt and pepper, and you’re good to go!

Oh, literally my favorite food. Try adding a handful a fresh chopped herbs (any, but chives and thyme are my favorites) next time!

Served on crackers or toast with a sprinkle of salt and cumin on top is also delicious!

My college roommate used to eat it with a dollop of apple butter on top. Apparently that’s a Pennsylvania Dutch thing. And it’s very tasty.

I love to eat it in the summer with fresh from the garden tomatoes with salt and cracked pepper on top. It’s so delicious and simple.
